(1.19.3) Changing the parameters of an existing food items

Hi! My mod is based on survival and I wanted to change some parameters of the existing food, e.g. apple which gives 0.5 less hunger or rabbit stew which gives 1.5 more hunger.
Unfortunately, the Minecraft file with the food parameters is read-only. I tried different commands but nothing works and I couldn't find anything on YouTube either.

Is there any way to overwrite the properties of existing items?

But I just want to do a little food rework. Nothing can go wrong.
