A question about Custom NPC's 1.12.2

I have an NPC that is going to go with you on a mission, but only after you talk to him through dialogue and get the quest. Once the dialogue is over, I wanted him to instantly follow you without pulling up the Follower GUI and giving him an item after the dialogue is finished. Also, I was wondering if there is a way to stop an NPC from following you instantly with a command.

 

For now, I'll create a duplicate of the NPC when the dialogue is complete right on top of the original, with the duplicate following a path once he spawns. It'll be like an escort quest.

 

And one more thing, I would recommend an option in Moving Path where once they reach the final point they stop. Not sure if that's a thing yet.
