Removing/Disabling Minecraft Graphics/Rendering

I want to disable the Minecraft graphics, to stop the window from rendering everything so that it would be very computationally efficient when I open many instances of Minecraft.

Why? What are you trying to accomplish?

There is a version of minecraft that has this feature: it's the server.

I want to create many instance of minecraft to run simulations but don't want it to waste processor power to render graphics. I already found a method in forge that allows me to create a offline minecraft instance. The Main class I think does that.
