    Outlook email to a Google Doc?

    You could convert your email to a .doc file and then upload it as a Google doc on your drive. For this you will need a utility that can handle Outook email if available in PST and if you want to directly convert from the email account to Doc without saving it first as PST then a webmail converter. CoolUtils actually has both Total Outlook Converter and Total Webmail Converter. https://www.coolutils.com/TotalWebMailConverterthey offer a trial before needing to buy a license.
