    Hello! I know that this is a really old thread, but I was able to find a workaround that actually works! The Pixelmon mod developer team posted a very useful guide for M1/M2 chip macs on their Installation page (see https://pixelmonmod.com/wiki/Installation). TLDR, you need to use an alternate launcher (Prism Launcher https://prismlauncher.org/download/mac/) with an old version of Java (8u311, https://www.oracle.com/java/technologies/javase/javase8u211-later-archive-downloads.html#license-lightbox). By using a launcher that allows you to work with older versions of Java, you can bypass the incompatibility from newer mac chips. The launcher was very easy to configure and the whole process took maybe 20 minutes. You can use it for any mods, not just established mod packs like Pixelmon. I hope this is helpful to anyone still looking for a solution!
