I'm getting the same issue here too. For instance, villagers named as Butchers want to buy leather and sell leather pants, while villagers tagged as Leatherworkers want to buy raw pork and chicken. They're back-to-front. I've also seen the same mix ups with the Armorer, Weapon Smith & Tool Smith sub-classes. Their appearance is correct in that they have black robes, but they have trades from one of the other sub-classes (Armorers having the Tool Smith trades for example). I imagine it's the same deal with the Farmer, Fisherman, Shepherd & Fletcher too. Hope this helps.
