I would like not only to add damage, but also to manipulate other properties. For example, how can I change the charging speed of the bow. Or add two more arrows to the side, like a crossbow. Or even make an arrow that flies after the mob itself, as if it were an aim

Have the arrow have a mob target and update the position and rotation to fly directly at the mob. Will need a custom Arrow class for this since the projectile just takes the path it was aiming. You'll also need to do a sweep for entities up to a certain distance in the direction you want your arrow to fly.
