Crashing constantly when I open up vault hunters modpack (with a few additions)

Did the pack work before the additions? If so, try adding the additions one by one to see which one causes the crash and then remove it.

For some reason every addition I add has the crash with this 
java.lang.IllegalArgumentException: Failed to create model for minecraft:pig

Either the mods being added or the mod in the pack is most likely doing something that's preventing the model set from properly handling new mods. If you want to add more mods, you'll probably need to find out which of the existing mods is causing an error by splitting the mods and testing them each with one of the mods you are adding.
