All Minecraft Forge Servers on my pc timed out (1.16.5) and windows terminal not responding

First time something like this happens in my pc, and i've been using it to host servers (in all versions from 1.6.4 to 1.19.2, but mostly 1.16.5)

For context i have 2 servers now running, one has the Create: Above and Beyound modpack from curseforge and the other has the official pixelmon pack also on curse, both are on 1.16.5.

The only thing that comes to my mind is the java version, as i think i used jdk11 before (not sure) and now i have jdk15.

The thing that consumes my mind is that both servers "go down" at the same time and with no warning, the windows terminal window becomes "not responding" and the servers appear online in the server list, but when someone tries to join they time out.

This is pretty annoying because i have some scripts that catch crashes and restart the server, but with this problem, the windows becomes unresponsive and the script doesn't restart it.
