[1.7.10] Mod help remembering data+

In my mod so far the player right click an ore and it changes

I would like to know how to get minecraft to "remember" how many times it does

so that on the first try a the player is told by chat a text

and after many more times a recipe is unlocked

so i kneed to know

1. how to make minecraft "remember"

2. how to add a message to the player in chat

3.how to lock/unlock a recipie

It is per player Per world and each player unlocks it separately
