You can render a block using Blockstate files & models, but you can also do this using a TileEntitySpecialRenderer.

People say not to use this (or it isn't "accurate"), what is so bad about this?

If you don't need to render anything that changes depending on the tile entity, just use normal json models

This is not true. The criteria for whether you need a TESR or not is whether you have moving parts in your model. If you do not have moving parts, you do not need a TESR.
