How to edit Minecraft source files

Is there a way to edit the Minecraft source files (Minecraft.java ect.) using eclipse IDE? I cannot edit referenced libraries so is there a way to edit the source folders. I have seen other modders do this though they never provided instruction on how.

What I would like to do is modify the dirt blocks so it is burnable, and add code in the game loop

yes, I would like to add a kind of tickevent. Also would like to edit in game gui menu

 

Edit: and add text to nametags on players (health ect)
