I knew it wouldn't totally remove the original armor from the game, as it would still always be there in creative. How would you go about overriding their registry entry?

That's what I was thinking. Essentially make the recipes craft this new armor instead. I didn't know if there was any easier alternative methods, but I guess I'll do this instead.

Sort of new to modding, but I know how to make basic armor and even armor with actual models. How does one go about giving 3D models to the basic vanilla armors (Leather, Iron, Gold and Diamond)? I know there's probably some round about ways, but I figured there's simpler ways as well.
