[solved] Modify / remove vanilla items

I would like to remove and/or modify vanilla items.
More specifically, i would like to:
- remove / modify certain enchants (like protection)
- modify potion effects, and if possible, tipped arrows as well

but I've heard a lot of issues in modifying vanilla code as it's not meant to be changed and is just being read, and even when modifying it correctly, can cause major crash issues which I wouldn't prefer.
Although I do want to give it my own go at it, but would like to get a base line on where to start and maybe get a workaround or alternative to my goal.
