I've managed to make vanilla grass drop my modded item, but it's overridden the seeds drop.

how would I be able to keep both loot tables?

Best to use Global Loot Modifiers

  I haven't tried any other launcher. I think I'll go and try MultiMC, and if the same error happens, we'll know that the problem doesn't stem from the launcher. I'll reply here after I try that!
