1.20.x Adding loot to existing vanilla chests

I think this changed in 1.20 version and it is not recommended to use LootTableLoadEvent for this purpose from what I understand from the documentation.
So what is the preferred method and is there any examples? These somehow link to the resource files still I guess?
Has anyone done this with Global Loot Modifiers?

game changed the way you create foods.
for example minecraft 1.21.8 code for the golden apple is
