Is it possible to have multiple achievements as prerequisites to one achievement? And if so, could it be set up so it only needs you to have one or the other?

Not with the standard setup.

 

You could watch on some basis for the first two achievements to be true or whatever pattern you want and then just grant the one you are interested in.
