[1.15.2] How to create 3D item models?

I am trying to make 3d gun models for my mod but every search I do leads me to how to create a datapack instead of a mod. Can someone point me to some tutorials / documentation please?

It's the same way you create a block model. Either go pure json or use one of the many modeling softwares there are to write the json for you. One of popular ones is Blockbench.
