How do I edit a vanilla item?

Editing the vanilla source is obviously not possible since it is read only, and in my experience (and from my first question here lol) trying to get vanilla items from the registers and manipulate them has caused some major issues. It might be easier to create the unbreakable tools and armor as new items and then make a data pack to override the loot tables to force the new items to be the ones dropped/built rather than the vanilla ones?

Well, like Capricocious say, its impossible to edit vanilla content directly, but, you can edit them in events, and add to them the property to be unbreakable.
You just need to ensure what event you want to edit, also, other option is to create your own netherite items extending current vanilla, and when player gets a vanilla netherite item you override it, like in crafting recipes.
