Please learn what that "8" is, vanilla's NBTBase. (8 is a string).

 

Other than than that - make prints in getters and setters and track where is problem (really easy to debug). #WhyBitwiseOperations :x

I'm a girl and the collarColor has nothing to do with the gender, I copied that to use for my entity's collar color, which is what Minecraft uses for the wolf's collar collar

Your code has flaws:

	boolean isGenderSet = false;

	if (isGenderSet == false) {

Seriously?

if (tagCompound.hasKey("gender", ) {
		this.setGender(tagCompound.getBoolean("gender"));
	}

Please learn what that "8" is, vanilla's NBTBase. (8 is a string).

That's the exact same thing, except now it's a class-scoped variable instead of function-local.  The default value for a boolean is false.

 

Since readFromNBT is called after entityInit it will overwrite your random gender if there is one on disk.
