Hello! I'm looking to render a horse as a different mob, say a cow for instance; upon mounting the horse with the EntityMountEvent, it appears that I am riding a cow around instead. What is stumping me is how to do the render itself.

Any help would be appreciated, thanks!

The best way would be to create an entity in a fake world with the same motion, position, look direction, limb positions as your entity, and then render the other entity from your entity’s renderer
