I know how to display an image, and I have working code for it. But when I try to use the full path of an image on my computer, it doesn't work. I believe that the image is being searched for in the jar, is there any way to "escape" from the jar?

Look at computer crafts Src how they save the files in the computer.

Not sure if you understood, I'm trying to access files, not save them..

If you can save them you can read them in theory.

Personally I don't think they will be the same thing, I'll check it out, but I'm skeptical.
