[1.10.2] ItemStackHandler/IItemHandler extract/insert customization

I'm working on a sort of crafting table that keeps it's inventory. I've implemented it with a custom ItemStackHandler (to allow for craft result to change whenever a change is made, but I can't seem to figure out how to set up rules for insertion and extraction. I want to only be able to extract the resulting item from the craft, and I want to disable all insertion. I can't just override the insertItem method and make it return null (items get inserted and disappear), and I haven't a clue as to how to disable it.

 

Can anyone point me in the right direction?
