Why do you have Optifine installed on a server? Beyond that, your server is just incapable of running fast enough, what are its specs?

Having an M1 has screwed you here. Apple changed their graphics API without providing backwards compatibility and no existing version has the updated version of GLFW.

Forge for 1.16 and older is not compatible with Java 16 at this time

What happens if you remove Optifine?

I'm afraid your friend is going to need to binary search the mods for whatever is causing this, because it makes no sense.
