From today (2021.05.13), with 21w19a, Mojang ships Java 16.x not a Java 1.8_x.

if you use the minecraft launcher you do not have to do anything

I use third-party launcher so I just unpacked Oracle JDK 16.0.1 zip file for runtime and OpenJDK 16.0.1 zip file for development

yes as of 1.17 you need java 16

This is wrong, they still ship J8 for <1.17 So for any of the versions that arnt the latest snapshot use J8.
