How to add a GUI/Screen to a default vanilla mob(1.17.1)

I’m trying to make a mod that lets you view villager inventories when you shift right click on them. I can’t find a tutorial anywhere about adding GUIs/Screens to entities, I can only find one for tile entities and ontop of that it’s for a new blocks so I have almost nothing to go off of. Any sort of help would be appreciated.

I’m probably just being stupid tho.

Yeah but I couldn’t get much out of it, the code was all over the place. The only thing I could find related to guis is opentradescreen() or something. I’ll probably double check but I doubt I’ll find anything.

game changed the way you create foods.
for example minecraft 1.21.8 code for the golden apple is
