This is the code from ItemSword

    public Multimap<String, AttributeModifier> getItemAttributeModifiers(EntityEquipmentSlot equipmentSlot)
    {
        Multimap<String, AttributeModifier> multimap = super.getItemAttributeModifiers(equipmentSlot);

        if (equipmentSlot == EntityEquipmentSlot.MAINHAND)
        {
            multimap.put(SharedMonsterAttributes.ATTACK_DAMAGE.getName(), new AttributeModifier(ATTACK_DAMAGE_MODIFIER, "Weapon modifier", (double)this.attackDamage, 0));
            multimap.put(SharedMonsterAttributes.ATTACK_SPEED.getName(), new AttributeModifier(ATTACK_SPEED_MODIFIER, "Weapon modifier", -2.4000000953674316D, 0));
        }

        return multimap;
    }

I think it's the ATTACK_SPEED modifier, but I'm not 100% sure

Edit: Oops didn't see the "for every item" part ^^

Edit 2:

Maybe that will work? (According to the wiki)

				public double getAttackSpeed(Item item){
					double x = 0;
					if(item.getAttributeModifiers(EntityEquipmentSlot.MAINHAND, new ItemStack(item)).containsKey("generic.attackSpeed")){
						for(AttributeModifier mod : item.getAttributeModifiers(EntityEquipmentSlot.MAINHAND, new ItemStack(item)).get("generic.attackSpeed")){
							if(mod.getOperation() == 0){
								x += mod.getAmount();
							}
						}

						y = x;

						for(AttributeModifier mod : item.getAttributeModifiers(EntityEquipmentSlot.MAINHAND, new ItemStack(item)).get("generic.attackSpeed")){
							if(mod.getOperation() == 1){
								y += x * mod.getAmount();
							}
						}

						for(AttributeModifier mod : item.getAttributeModifiers(EntityEquipmentSlot.MAINHAND, new ItemStack(item)).get("generic.attackSpeed")){
							if(mod.getOperation() == 2){
								y += y * mod.getAmount();
							}
						}
					}

					return y;
				}

The wiki says that this is how attribute modfiers are calculated, but I don't know if an item can contains multiple attack speed modifiers. You might only do mod.getAmount() once aswell
