    Minecraft targets Java 8, Forge always targets the same as Minecraft, but both should be able to be used up until Java 10.

    The two channels are snapshot and stable, you want a version that is listed here, here, or here. Note: The versions hosted on the Forge maven don't show the trailing MC version but it still exists in the backend if you check the direct link.
