Starting with 1.17.1 Forge servers will need to be started with the provided scripts (.bat for Windows, .sh for Mac/Linux)

Having a Mac has screwed you here, Apple changed their graphics API with no backwards compatibility and the GLFW update that accounts for the API change hasn't made its way through LWJGL yet
